Ingredients
- 1 dose (15ml) Dosed Decaf Liquid Coffee
- 80ml full cream milk
- 1 large egg
- 30g unsalted butter melted (2 tablespoons)
- 40g caster sugar (3 tablespoons)
- 1/2 teaspoon vanilla extract
- 30g plain flour (3 tablespoons)
- 10g cocoa powder (1 tablespoon) plus extra to dust
- 1/4 teaspoon baking powder
- small pinch of salt
- 20g dark chocolate 70% cocoa or above (3 to 4 squares)

Step 1: Melt the butter. Add the butter to your mug and microwave on HIGH for 20 to 25 seconds until melted. Let it cool for a minute before adding the egg, or you will scramble it.

Step 2: Mix the wet ingredients. Add the milk, egg, Dosed Decaf dose, vanilla extract and caster sugar to the melted butter. Whisk well with a fork until everything is combined and the sugar starts to dissolve. The mix will look dark and glossy.

Step 3: Add the dry ingredients. Sift the flour, cocoa powder, baking powder and salt directly into the mug. Stir until you have a smooth, even batter with no dry pockets. Stop as soon as it comes together. Overmixing makes it tough.

Step 4: Add the chocolate center. Push your dark chocolate squares down into the center of the batter until they are fully submerged. This is your molten center.

Step 5: Microwave. Cook on HIGH for 60 to 75 seconds. The edges and top should look set while the very center still has a soft wobble. If your microwave runs under 900W, add 10 to 15 seconds. If it runs hot, check at 55 seconds.

Step 6: Rest and serve. Leave the mug in the microwave with the door closed for 30 seconds. Residual heat finishes the edges while keeping the center molten. Take it out, dust with cocoa or icing sugar, and eat immediately. The lava does not hang around.
