The tiramisu is an authentic Italian recipe that consists of layering cream and coffee soaked biscuits to create a trifle-like layered rich and wholesome dessert. Tiramisu, which also means 'pick me up' in Italian, perfectly depicts their love for coffee in the traditional culture of Italy, with a hearty recipe that is light but has the perfect coffee kick you need.
4 eggs (separated)
1/3 cup caster sugar
250g mascarpone
300ml thickened cream
2 doses (30 ml) of liquid instant coffee
300ml hot water
Lady finger (sponge) biscuits
Cocoa powder
Start by cracking 3 egg whites into a large bowl then add your sugar and whisk until it becomes light and fluffy. Then add your mascarpone and thickened cream and mix until combined. In a separate bowl crack your last egg white in and whisk until it becomes fluffy, then pour that in with the rest of the cream ingredients and fold until combined, then pour a 2cm thick layer of that mixture into a flat tray.
Add your liquid instant coffee and hot water to a separate bowl and stir to combine, then start dipping your lady finger (sponge) biscuits into the coffee liquid until it's soaked and start layering it on top of the mixture in the flat tray. Keep placing the coffee dipped lady fingers side by side until the whole flat tray mixture is covered by one layer of lady finger biscuits.
Add a second layer of the mascarpone/ cream layer and repeat the process so you have one layer of mascarpone/ cream mixture, one layer of biscuits, ending in the mascarpone/ cream layer. Set in the fridge for a minimum of 2 hours and serve by dusting a generous layer of cocoa powder on the top.
